You’ll be surprised how easy it is to make risotto in the Instant Pot. The secret to its creaminess is stirring the Instant Pot during the last bit of cooking after opening it. It allows you to see and taste the exact moment when the rice is fully cooked and creamy.

Instant Pot Risotto Ingredients

The ingredients in Instant Pot Risotto are pretty basic, so choosing the highest quality ingredients will give you the most delicious results.

  • Meter: Arborio rice is the best rice for risotto.
  • Cooking liquid: Rice is cooked with dry white wine and chicken stock. If you like to cook without wine, add more broth.
  • Aromatics: Shallots, garlic, fresh rosemary, salt and black pepper add flavor to this dish. If you don’t have rosemary on hand, you can substitute tarragon or thyme.
  • pea: I used frozen baby green beans, but you can use larger or fresh peas.
  • cheese: I prefer Parmigiano Reggiano, which has a deeper and more complex flavor than Parmesan, but both will do.
  • Ham: Crispy prosciutto is easy to make in the Instant Pot and adds flavor to risotto. But if you want to prep ahead, here’s a cool shortcut: put the pieces on a plate and microwave for 30 to 45 seconds. quick! Also, omit the prosciutto if you want a vegetarian risotto.

What to Serve with Instant Pot Risotto

Since this risotto is a bit heavy, I would pair it with lean protein such as chicken breast, shrimp, or pork tenderloin.If you want extra veggies, please provide some asparagus or a Arugula Salad on the side.

Making risotto in the Instant Pot is the easiest and quickest way to make it without watching and stirring the whole thing.

  • 2 cup Low Sodium Chicken Broth
  • 2 slice Ham, (preferably parma ham)
  • 2 teaspoon olive oil, (preferably a super virgin)
  • 1/2 cup chopped shallots, (about 3 small)
  • 3 garlic cloves, minced
  • 2 teaspoon chopped fresh rosemary
  • 1 teaspoon coarse salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1 cup arborio rice
  • 1/3 cup dry white wine
  • 1 cup frozen green peas, thaw
  • 2 ounce parmesan cheese, (preferably Parmigano Reggiano)
  • Heat broth in a small pot over medium heat until hot.

  • Reduce the heat to maintain the temperature and do not let the broth boil.

  • Set the Instant Pot or similar multi-cooker to high fry.

  • Add prosciutto to bottom of pan and cook until browned and crisp, 2 minutes per side. Remove to a plate and set aside.

  • Set the heat to medium, add the olive oil, shallots, and garlic and cook, stirring until softened, about 2 minutes.

  • Add rosemary, salt and pepper and blend for 30 seconds. Stir in rice, allow grains to coat with fat, and cook for 1 minute.

  • Add the wine and stir to ensure any browned bits are removed from the bottom of the pan.

  • Add the hot broth, cover the Instant Pot, and close the vent (seal position). Set to pressure cook function for 6 minutes. Quickly release pressure (vent) and open lid.

  • Set the Instant Pot function to sauté on medium heat.

  • Add the peas, stirring continuously for 2 minutes, until the remaining liquid is absorbed, the peas are heated and the rice is creamy.

  • Turn off the heat and stir in the cheese.

  • Serve the rice with crispy prosciutto.
