We are super chili fans!As soon as winter comes, I have this sausage peppers, Beef Chilislow Cooker Turkey Chiliand Buffalo Chicken Chili Repeated throughout the season.However, while I am leaning more towards meaty chili recipes, I love this Sweet Potato Black Bean Chili For meatless options.

But when I want a meatless chili without meat, I take a pack of plant-based meat substitutes, like the Impossible™ Burger, and make a “meaty” meatless vegan chili.

I have used Boca crumbs in the past and even stocked up on plant-based meat substitute crumbs. So if you can’t find the Impossible™ Burger, use your favorite meat substitute.
  • water Helps break Impossible™ burgers into pieces. For extra flavor, you can also use vegetable broth.
  • Chili Seasoned Diced Tomatoes Gives vegetable chiles another layer of chili flavor. You can also use regular diced tomatoes or fire roasted tomatoes. If you have a can of green peppers in your pantry, feel free to add a can of green peppers.
  • black beans Provides plenty of texture, fiber and protein. Pinto or kidney beans can also be used in this recipe. You can also use chickpeas, so use your favorite.
  • Chili ingredients. We love cilantro, sour cream, plain Greek yogurt, shredded cheddar, avocado, lime and crumbled tortilla chips.

How to make vegan chili?

  • In a stock pot or Dutch oven, sauté the onions in olive oil over medium heat for about 3-4 minutes.
  • Add the garlic and sauté another 2 minutes.
  • Add the chilli, cumin and chilli and fry for another 2 minutes.
  • Add the plant-based meat substitute (Impossible burger) and water and cook for about 4-5 minutes, breaking into small pieces when cooked.

  • Add tomatoes, beans, oregano, and bay leaves to stock pot and stir until combined.
  • Bring the peppers to a boil, then simmer for about 25 minutes.
  • Remove the bay leaves, transfer to a bowl, add your favorite chili topping, and serve hot.

Slow Cooker Instructions

Before it’s done in the slow cooker, you’ll need to do some prep, and that’s what I recommend.

  • in a large frying pansaute chopped onion in olive oil for 3-4 minutes.
  • Then add the garlic and sauté another 2 minutes or until fragrant.
  • Add the onion and garlic, add the chilli, cumin and chilli and fry for 2 minutes.
  • Add the plant-based meat substitute and water to a saucepan and cook for about 4-5 minutes, breaking into small pieces when cooked.
  • Pour the vegetable and meat substitute mixture into the slow cooker, then add the rest of the ingredients. Set the slow cooker to cook on low for 4-5 hours or on high for 2-3 hours.

Chipotle pepper seeds are where most of the spices are, so to keep the spiciness and heat levels manageable, Remove seeds before adding peppers to recipes. You’ll still get that smoky, spicy flavor, but the chili won’t be as hot. Of course, if you want a super spicy chili, just leave some seeds.

If you don’t have jalapeños in adobo sauce, You can substitute chipotle paprika Next to chili seasoning in the flavored grocery aisle. Smoked paprika also adds a smoky flavor.

Stir in quinoa Get extra protein, fiber, and antioxidants in this vegan chili. If you are using dry grains, use about ¼ – ½ cup, then add a cup of water or broth.

If you want to use brown rice, I recommend stirring in the cooked brown rice after the peppers are cooked, or placing the peppers on top of the rice in a bowl. I don’t recommend adding dry brown rice directly to the chili as it will add too much cooking time.
